Inside the Workshop: What 350 Students Learned From a Goat Carcass

What happens when 350 hotel management students move beyond textbooks and step inside a professional meat fabrication session?

At IHM Bhopal, Chef Mohammad Husain conducted an intensive Goat Carcass Butchery & Meat Fabrication Workshop, designed to transform theoretical knowledge into practical understanding. With four whole carcasses used for demonstration, students experienced the complete journey of meat fabrication—from understanding carcass structure and identifying primal sections to breaking down the carcass into usable cuts.

The workshop focused on more than simply demonstrating how to cut meat. Students explored carcass anatomy, meat science, identification of cuts, portion control, yield, value addition, kitchen applications and commercial considerations. They learned how professional chefs make decisions that affect not only the quality of a dish but also food cost, wastage and profitability.

A particularly important takeaway was understanding that butchery is both a culinary skill and a business skill. Every cut has a purpose, every portion has a cost, and every part of the carcass can contribute to a more efficient kitchen operation when handled correctly.

For many students, seeing an entire carcass transformed into practical cuts created a connection between farm, butcher, kitchen and plate that classroom theory alone cannot provide.

The workshop demonstrated the value of experiential culinary education—where students don't just learn about ingredients, but understand them through direct observation, professional demonstration and industry-focused discussion.
